My apologies. My food descriptors have been infiltrated by my foodie husband’s vocabulary. (Hangs head in shame.) My only defense is that “mirepoix” is one word while “onion, celery, and carrots” are four. And I am Lazy.

For those unfamiliar with foodie jargon, a mirepoix is the mix of chopped up onion, carrots, and celery that is the base for most soups. The total amount of the mirepoix is composed of half onion, a quarter carrots, and a quarter celery. Just approximately, no need to worry overmuch about it. I sure don’t.
